Broiled salmon with grapefruit salsa

I am OBSESSED with crispy, broiled salmon. I probably make it at least three times a week! In taking advantage of citrus season, I've added a topping to my fish of bright, grapefruit salsa that's taken my weeknight staple to an entirely new level! Get this quick and delicious recipe below:


Ingredients:


2 - 3 large grapefruits

2 green onions

1 bunch cilantro

1 jalapeño

1 lime

1 teaspoon kosher salt

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon paprika

4 salmon fillets (about 6 ounces each)


Step 1:


Turn your oven to broil.


Step 2:


In a small mixing bowl, whisk together the spice rub for your salmon:


1/2 teaspoon salt (or to taste)

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon paprika


Step 3:


Line a baking sheet with foil, and place your salmon filets skin-side down. Drizzle each piece of fish with olive oil (about a tablespoon or so on each filet) and sprinkle on the spice rub. Be sure to evenly distribute the spices between each of the four filets. If you're making a smaller portion, save the rest of the rub and use it later in the week to flavor chicken or veggies!


Step 4:


Make the salsa by combining:


1 cup of sliced grapefruit. Depending on the size of your fruit, it may take two or three grapefruits.


With a sharp knife, remove the peel of each grapefruit and segment it into slices. You should have just the flesh of the grapefruit remaining with all of the white pith removed. Once the grapefruits are segmented, cut the slices into bite sized pieces. Then, place them into a mixing bowl.


Remove the seeds and membrane from one jalapeño and finely dice it. Then, add it to your mixing bowl. (For more heat, keep the seeds.)


Slice two green onions on a bias (makes for pretty diagonal cuts) and add it to your mixing bowl.


Mince 1/4 cup of cilantro and you guessed it... add it your mixing bowl!


Finely, squeeze the juice of 1/2 of a fresh lime over your salsa, and sprinkle with 1/4 - 1/2 teaspoon salt. Mix together until everything is evenly combined.


Step 5:


While the salsa flavors marry, broil your salmon for about 8 - 10 minutes depending on your preferred internal temperature. The outside should look crispy, while the inside remains tender and moist.


Step 6:


Once your salmon is cooked, top each filet with a generous spoonful of grapefruit salsa, and serve with rice or roasted vegetables! Talk about a fresh, easy, and healthy homemade meal in minutes!
