With a new year comes a new opportunity to start fresh. This year, I really want to focus on nourishing my mind, body, and soul. For me, it takes giving attention to all three to truly see a difference in my life. And, as someone who loves food and enjoys eating, I have to make sure my meals are satisfying in order to stay motivated! My "New Year Nourish Bowl," is just that -- packed with flavor, it's the perfect quick and healthy meal to whip up in your weekly rotation! I'm sure you'll love it just as much as I do!
Ingredients:
2 bunches of lacinato (dinosaur) kale
2 cups diced sweet potato
2 cups halved Brussels sprouts
1/2 cup thinly sliced red onion
1/3 cup pomegranate seeds
1/2 of a sliced avocado
1/2 cup olive oil
1 tablespoon fresh rosemary
1 tablespoon 100% pure maple syrup
2 tablespoons apple cider vinegar
1 teaspoon dijon mustard
2 minced garlic cloves
salt and pepper to taste
Step 1:
Preheat your oven 425 degrees.
Step 2:
Peel and dice the sweet potato into 1 inch cubes, and cut the Brussels sprouts in half.
Toss the veggies in 1/4 cup of olive oil, 1 teaspoon salt, 1 teaspoon pepper, and 1 tablespoon minced fresh rosemary.
Place the veggies on a baking sheet and roast for 20 minutes or so, flipping halfway through until crispy on both sides.
Step 3:
Make the dressing by whisking together:
1/4 cup olive oil, 2 tablespoons apple cider vinegar, 1 teaspoon Dijon mustard, 1 teaspoon 100% pure maple syrup, 2 minced garlic cloves, and salt and pepper to taste.
Step 4:
Remove the kale leaves from their stems and shred.
Place the kale in a bowl and pour over half of the dressing.
Massage the dressing into the kale leaves with your hands, to ensure the leaves are tender.
Step 5:
Top the kale with your roasted Brussels sprouts and sweet potato. (You may have some leftover depending on your preference!)
Then, add your sliced avocado red onion, pomegranate seeds, and some more of your dressing! Bonus: add some flakey salt on top of your avocado for even more flavor and crunch!
