This dessert topping is an absolute dream. It's just as fluffy, creamy and delicious as it's sugary counterpart, but vegan, paleo, Keto, sugar-free and dairy-free. Sounds too good to be true? Think again:
STEP 1:
You'll need 1 can of unsweetened coconut cream. It has to be chilled in the refrigerator (not the freezer) at least overnight. I buy mine at Trader Joes. If you're making this for a party, be sure to plan a day ahead!
STEP 2:
24-hours has passed and it's time to make this miracle treat!
You'll need:
An electric mixer or bowl and beaters (I don't recommend whipping this by hand.)
1 teaspoon vanilla extract
1 tablespoon powdered sugar of your choice (I use Lakanto monk fruit sweetener because it is Keto and paleo friendly without being artificial.)
STEP 3:
Scoop out the thickest part of the coconut cream from the top of the can and place it in your bowl. Leave out the remaining coconut water/oil in the bottom of the can because it will make your whipped cream watery. Set this to the side, because you may need it later on. Add in your vanilla and sugar, and beat until light and fluffy. If your coconut cream starts to seem too thick, add one tablespoon of the coconut water/oil at a time back into the bowl and beat again until you reach your desired texture. I love to serve this over fresh fruit, such as strawberries and mint or with peaches and a sprinkling of cinnamon.
